Parsnip is a root vegetable closely related to the carrot. A biennial crop, parsnips have a tapered, cream-colored body. With a sweet flavor and high in vitamins, especially potassium, parsnips are excellent in a roasted mixed vegetable medley, soups, steamed, or grilled.
